Well folks,
For all of you who signed up with Urban Digs Farm as a subscriber to the Beasty Box meat and charcuterie weekly membership, we have news for you! Last night we worked late, butchering our first whole pig for the program. We received a beautiful, 250lb hog from Gelderman farms and set about portioning it into prime cuts, meat for ground and curing, bacon and offal. It was lots of fun, and we’ll be back in the kitchen again tonight preparing meat for sausages, hocks for stocks and more. Here are some pictures from last night’s activities:
