I’ve been at home mostly for the past month with our new baby, Ariana, so I’ve had lots of time to do some cooking. Recently I read about the practice of “hiding” vegetables so kids will eat them, and it horrified me! So, as a retaliation, I started hiding Re-Up Bacon in vegetable based dishes. Above are pictures of my attempts to insert bacon into braised leeks and cooking off some lardons to flavour a spaghetti sauce. We’ve decided our daughter is into the bacon because whenever Michael comes home smelling like smoked pork, she can’t get enough of it!
It’s been super nice lately at the market, and yesterday I took the bébé down to the air conditioned food hall to visit her dad. We captured a fine photo of the New Westminster Pier right outside of Wild Rice, which I might add, just opened their patio. The Re-Up crew has had great success at drinking beers and eating their super shrimp toast there on lazy evenings after work. And speaking of Re-Up, the boys have got their hands on some fruit, and we now have a few summer sodas to wash down the BBQ. Blueberry Ginger seems to be a big hit, and we’ve brought back last year’s favorite “pink drink,” watermlon.

Ladies and Gentlemen:
This IS the summer of BBQ - for us anyway.
Having our own kitchen is really the best present to ourselves, ever. We can serve more than just pulled pork sandwiches, and we get to play with our ingredients and make new things all the time. Chester’s been making doughnuts before opening everyday, and his southern biscuit cobbler is getting better every time!
Right now, we want to hear what you’re doing with our smoked bacon. Cove Fine Foods (in Deep Cove) made this little number with Erin Ireland’s banana bread and our bacon- scroll down a bit…

What’s your bacon triumph? Send us a picture!
PS: Wes Koopmans - we expect to see all your bacon triumphs
PPS: @weskoop says 5 minutes after posting this: PRESSURE! I bake it at 450 till the edges are crispy (8-9mins) — Insert into BLT, BLT Pizza or with over easy eggs rolled in crepes
That was a quick response…..
